Submit your favorite Bulgarian recipes through September 2008
The Bulgarian Center is now accepting recipes for inclusion in the updated edition of its popular cookbook, A Taste of Bulgaria. You can email them to bmnecc@gmail.com, or send them to:

The cookbook was originally published in May 1988. It is compiled, edited and entirely created by the members of the BMNECC. All proceeds from sales of the book benefit the organization, which is a 501(c)3 organization.
The cookbook is organized into various sections, and includes recipes for specialties served during the Pittsburgh Folk Festival, plus recipes for main and side dishes, appetizers, soups, salads, breads and pastries, cakes, cookies, desserts, candy and beverages.
Here is one of the popular recipes included in the cookbook:
Mushrooms and Rice
(Oris i Gubi)
1 stick margarine or butter
1 medium onion chopped in small pieces
1 cup rice
3 cups liquid (mushroom juice and/or water)
1 cup chopped mushrooms (1 small can - mushroom pieces and stems)
Fry onions in margarine until soft. Add rice and fry until rice is white on tips. Put mushrooms in baking pan, add rice, onions and liquid. Salt to taste. Bake in pan 8x8x2 in 450 degree oven until water is absorbed by rice. Sprinkle with black pepper after removing from oven.
